Ginger-honeybread House

In Denmark baking is a key element to the holidays. I don’t know a single person who doesn’t associate baking with Christmas. Now we do bake all year around, but it’s when december hits that we bake the more heavy spiced stuff like gingerbread. So here I am with a recipe for a ginger-honey bread house also called “Honningkagehus” in Danish.

 

Ingredients

For the dough:
400 g of Honey
235 g of Cane sugar
235 g of Butter (salted)
10 g of Potash
2 tbsp of Water
1 kg of All purpose flour
2 tsp of Ground cinnemon
1 tsp of Ground cloves
1 tsp of Ground ginger

For the icing:
1-2 egg whites
200 g of Icing/Confectioners sugar

 

How to

Step 1: Put the honey, cane sugar and butter in a pot and heat it on the stove. Bring it to a boil and remember to stir while the ingredients melt. You need to let the mixture cool until it’s luke warm!

Step 2: Desolve the potash in the water.

Step 3: Mix the flour, cinnemon, cloves and ginger. Put in the potash mixture and the sugar, honey, butter mixture. Stir until it combines, then knead into a firm dough.

Step 4: Put the dough in an airtight container and let it rest in the fridge over night (6-14 hours)

Step 5: Roll the gingerbread out (thickness 0,5-0,75 cm). Cut out the pieces for the house.

Step 6: Bake for 12-18 minutes at 200 degress celcius. They should be golden brown, but not burned!

When the pieces have cooled off you can mix the royal icing and assemble the house. Use your imagination when decorating :D

  1. I am the worst for baking, partially because I get bored half way through because it doesn’t start to look at perfect as I want it to. I have a gingerbread house to build over the weekend though!

    • Really? I thought you were one of those people, like myself, that oves baking and never gets bored XD
      But yaaay :D Gingerbread houses are so nice, but the dough we make in Denmark is soooo compicated D:
